FOR HOMELESS PEOPLE

INTRODUCTION


THE WILD GOOSE in BRISTOL has recently started a Cookery course for homeless people and those who attend for breakfast or lunch, even if they are not homeless.

What a brilliant Idea I thought so I went along


I didn't think I needed a lesson in cooking as I have been a very keen enthusiast of using the kitchen both for many generations as well as for many decades just myself.

1.  My mum was never out of the kitchen.  

On Fridays we would go to the local market and do a main shop for her weekend cookery art.



AT weekends she would be up at 5, 6 o'clock to start some major preparations for her cooking and baking which then would start at 8 .  By 12 pm she would have everything ready - which I did think was incredible.

She would cook a soup - maybe a chicken stock soup using up a full chicken and a full pan of different vegetables adding some small cut pasta shapes at the end .

For seconds we would often have Gulash, porkolt in Hungarian which would be a few hours of slow frying some meat - such as lamb, pork or chicken - for hours in a paprika sauce then adding some root vegetables, which would dissolve and become pulp for the spicy sauce accompanying the slow fried meat.  


This would be served with rice or pasta, boiled potatoes, chips, crocket potatoes, roast spuds or a variety of different accompaniments.  

She would vary the rice with rice with peas, or fried rice and similar

Dessert would be a main item and usually last til the following week . She would bake a whole tray of something sweet for just the the four of us.

My grandmother was even more of a kitchen enthusiast. She could do flame grills and all sorts


She would plan her cooking throughout the week and cook all weekend. 
 Whilst my mum did her main meal for Saturday, my grandma planned the main meal for Sunday and the entire Saturday would be spent on preparing for Sunday lunch.  At my grandma's there were always at least 8 to 12 of us she had to cook for so it was a bigger task in general as well as her being the keener chef.  She was an amazing cake maker too.  There is nothing she couldn't do . Whatever we requested she did for us form icing 
to lollies
from muffins
 to cheesecakes

 everything you have ever bought form a supermarket she had baked during her life
And we always had something fun to find on the table too

I AM A VEGAN

I love food.  I love food and all to do with food (ethical sourcing, preparation, invitations ) more than my ancients did , for that is what being vegan is about.


Being a vegan takes enjoyment of food to another dimension.


as a vegan you must grow your own microgreens 

and do sprout your own seeds 


as you must have fresh and raw foods every day and it is best those are of organic origin.

Both these activities are extremely enjoyable to a vegan and appear very tedious to an onlooker.

So never in my life I imagined I would NEED to attend a cookery course, but the Wild Goose is running one just now and IT's not too late to join

...

drop in Centre for the homeless and vulnerable had decided to put on a cookery course for anybody who is interested and actually started it about in August 2024

The first week Andy welcomed us with iced doughnuts and coffee

Only four of us turned up, but that was enough for a photo shoot , which then went out out on Social Media as well as for the  Black hole of Calcutta to appear after no more than about two minutes into the course ... 

Homeless people in Bristol create this hole and give you no more than TWO chances 

of grasping homeless people are very vulnerable indeed 


and are entitled to all privileges vulnerable people are entitled to including those privileges children are entitled to - these range from broad smiles to having their birthdays remembered and more.

Should you fail to either grasp homeless people are vulnerable 

...or to illustrate you know what that means you simply and easily disappear into this great big black hole on your vulnerable care path

from which you only surface again if you now truly truly care

I think putting on a cookery course specifically for us was such good news we could actually bring to the surface and deal with at least one mysterious disappearance of such from the past and correct what could be put right. 

Others thought Lee and Andy were disappearing in the Bermuda triangle 

or at least a couple of vessels of the Wild Goose - oops, down they pooped ,

I thought they were an up pop , a miracle so as you can tell I am thoroughly enjoying my cookery course.

so we covered kitchen hygiene


learned about the different colours of chopping boards

and learned Andy  likes to sing the Happy Birthday song

to know exactly how long 

to wash your hands for 

LOL

As well we chopped an onion in many different ways

I didn't think there was anything new I could learn about chopping onions but I learned a new way of holding your chopping knife - Thank you Lee

we learned about a few different knives too 

Had our photo taken then were given a couple of doughnuts to take home with us and Andy kept our handouts safe for the following week.

THIS WEEK WE STARTED WITH IDENTIFICATION OF SPICES


We had CUMIN

cayenne pepper


black pepper



garlic powder



ginger


paprika




 cinnamon


fennel 


turmeric



curry powder


Afterwards we did vegetable recognition and for that we had
savoy cabbage

butternut squash


courgettes



broccoli



Lee made some oven roasted butternut squash strips 


 and fried some chopped cabbage with sliced broccoli stem and covered the in some spices


This week there were five of us attending, this included Mikey who tried to catch a rapport with Lee. :) on some Bristol stuffπŸ˜€πŸ˜€πŸ˜€πŸ˜€πŸ˜€



We compared chefs becoming fat with homeless people taking drugs and became a little weepy for both occurrences.
